Overview

Every great chef has a repertoire of knowledge from which to draw - this is your chance to learn from a pro!

Whether you’re just beginning to cook or looking for a refresher of the basics, these hands-on courses will have you cooking comfortably in no time. Designed to build your culinary expertise, your journey starts with the fundamentals and continues to more advanced techniques, helping you learn to create spectacular dishes with a gourmet touch. Topics include knife skills, a wide range of cooking techniques, food safety and handling, plating and presentation techniques.

You do not need to apply to begin this program, simply ensure you meet the admission requirements (listed on the Admissions & Registration tab).

Interested in taking a single course? No problem. Provided you have the appropriate prerequisites, these courses can be taken individually or as part of the full program.

  • Ontario Secondary School Diploma (OSSD) or equivalent (Mohawk Academic Upgrading, GED) OR 19 years of age or older.
  • Some manual dexterity is required for the use of sharp tools

You do not need to apply to begin this program. Start by ensuring you meet the admission requirements listed above and then register for the courses listed in the Program of Studies when they are offered.  Some courses have prerequisites, so please check the Program of Studies for details. Find out how to register for a course.

The program of studies displayed below applies to students starting the program in the 2019/20 academic year. Students who began in other academic years may require different courses to be eligible to graduate. Instruction will be given on proper knife skills and handling, various cooking techniques and food presentation. CULI10070 Cooking Fundamentals - The Next Step Learn from a professional chef! Discover advanced methods (classic and modern) of food preparation & presentation. Covers simple to complicated dishes & creative plating methods. Become a food enthusiast and confidently make existing recipes in to your own "signature dish" without relying on written recipes. Food costs are the responsibility of the participant. Prerequisite: CULI10069 or equivalent. 24 hours.

CULI10079 Fast Family Food at Home Join our knowledgeable chef and learn to make fast, delicious affordable and healthy meals while passing on culinary techniques to the next generation. In this hands-on course, an appetizer and an entree will be covered each week. Food costs are the responsibility of the participant. CULI10069 or equivalent. 24 hours.
CULI10071 Fundamentals of Gourmet Dining Join our expert chef on a culinary adventure exploring different cuisines from around the world. Prepare a three course signature menu each week. Learn professional skills and impress your family and friends! Food costs are the responsibility of the participant. CULI10069 or equivalent. 24 hours.
CULI10078 Weekend Cooking Family Favourites Let our experienced chef demonstrate how to cook slow and luscious "comfort" family meals. In this hands-on "slow-food" course, discover international family favourites including appetizers, entrees, soups, stews and dessert. Food costs are the responsibility of the participant. Prerequisite: CULI10069 or equivalent. 24 hours.
CULI10080 A Dip In The Mediterranean Join our expert chef for culinary exploration of the great food cultures of southern Europe. We will be visiting France, Spain, Italy, Turkey and Greece to experience a hands-on introduction and taste some of the world's best cuisines. Food costs are the responsibility of the participant. Prerequisite: CULI10069 or equivalent. 24 hours.
