Vanilla No-Churn Ice Cream Recipe 

(adapted from the Food Network Kitchen)

Ingredients:

  • One 300 ml can sweetened condensed milk (this is different from evaporated milk)
  • 2 teaspoons pure vanilla extract
  • Pinch fine grain salt
  • 2 cups 35% cream, cold (this is also referred to as heavy cream or whipping cream)

 

Equipment:

  • One 9x5x3-inch metal loaf pan (chilled in the freezer prior to use)
  • Whisk
  • Hand-held mixer or stand-mixer (if you don’t have a mixer, a whisk will work but will require more time to whip the cream)
  • Rubber spatula

 

Directions:

Step 1: Whisk together the condensed milk, vanilla, and salt in a large bowl and set aside.

Step 2: Whip the cream with a mixer on medium-high speed until firm peaks form for about 2 minutes. If you don’t have a mixer, you can use a whisk but it will take longer for the cream to form firm peaks.

Step 3: With a rubber spatula, fold about 1 cup of the whipped cream into the condensed milk mixture until just combined, then add the remaining whipped cream until just combined (don’t overmix).

Step 4: Pour the ice cream mixture into a chilled 9x5x3-inch metal loaf pan and freeze, covered, until thick and creamy like soft-serve for about 2 hours.

Step 5: After about 2 hours, swirl in any mix-ins (see below) with a spoon. Continue to freeze, covered, until solid and scoopable, for about 3 hours more or overnight.

 

Variations:

Mint chocolate chunk: Replace the vanilla extract and add 1 – 1½ teaspoons peppermint extract in Step 1 and add a ½ cup of chocolate chunks (or chips) in Step 5.

Chocolate: Add ¼ - ½ cup of cocoa powder in Step 1 (sift the cocoa powder so it’s easier to mix). For double chocolate, add a ½ cup of chocolate chunks or chips in Step 5.

Coffee: Add 2 tablespoons of instant espresso powder (instant coffee powder would also work) in Step 1.

Caramel: Replace the sweetened condensed milk with caramel condensed milk (also known as dulce de leche). Note: The brand of condensed milk called “Eagle Brand” carries a dulce de leche condensed milk.

 

Mix-In Options:

Cookies and Cream: Add 12 chocolate sandwich cookies, crushed, in Step 5.

Mini chocolate bars: Add 1 - 1½ cups of your favorite chocolate bar in Step 5 (if full-sized bars, cut into small pieces).

Brownies: Add 1 - 1½ cups of your favorite brownie cut into small cubes in Step 5.
